What you should do in a difficult situation such as this one is attacking the enemy with the lowest HP first. An Archer has to keep their distance from enemies, and if there is more than one enemy attacking you, then it can be difficult to defeat any of them at all. As such, Archers should always make sure to shoot and defeat enemies that are on the weaker side so that they will not have to deal with multiple enemies.
The regular path is great; however, it won't allow the Dragonborn to practice their archery skills as well as traveling through the middle of the forest. You will encounter animals in open fields and under trees, which is why it is beneficial to travel into the middle of nowhere.
You can practice your archery skills on animals and other creatures in the fields of Whiterun hold, and this will be immensely helpful in learning how to aim and defeat enemies quickly with a bow. The Sneak skill is a major asset for any Archer build because you get a bonus for your damage dealt when you hit an enemy while undetected.
It is also much easier to hit enemies while undetected because they will usually not be moving around as much as they will be if they are attempting to attack you. Sneaking around is the best way to defeat enemies with a bow, and every Dragonborn needs to learn this if they plan on creating an Archer character.
Faendal is an Archer that lives in Riverwood, and you can involve yourself in a quest that allows you to meddle in his love life. In this Quest, Faendal and Sven are attempting to gain the affection of Camilla Valerius, and you can choose to help whoever you see fit.
After completing this quest, the person that you helped will become a follower. Faendal can level up the player's Archery skill. After buying training lessons from Faendal, you can go into this follower's inventory and take their gold out, essentially leveling up your Archery skill for free. Restoration is an important School of magic for an Archer because you will often find yourself in situations where you need to heal quickly and not have enough potions on hand to do so. Unfortunately, Archers usually don't have a lot of health, and as such, it is important to have a backup plan in case the Dragonborn is heavily wounded.

Yesterday I've started for the third time and now I'm playing pure archery with Nord Lady I've choosed as my character two mages before were males. I have to write that I rediscovered this game for second time!! Fus Roh Dah!!! I have a character that's a lvl 45 arcane archer, and it's so fun, but requires a bit of strategy at the beginning of a fight.
Once I got the Bound Bow spell, I tried using it as often as possible and soon realized that even with infinite arrows it creates a disadvantage at the beginning of a fight: the time it takes to pull out your hands, cast the spell, then wait for the bow to appear gives your enemies a TON of time to close in on you.
So I came up with a combonation of spells to start a fight. I'd start by casting Iron Ebony once I got it flesh and Ice Storm once I got it Atronach, then summoned my bow and finish what my atronach started. The atronach distracts your enemies long enough that you can effectively summon your bow without worry, and even if one of two enemies comes for you instead of your atronach, the Ironflesh spell will protect you a decent amount from the first few blows and give you time to knock them back with a bow-bash.
I had no trouble fighting even large groups of difficult enemies with this tactic. I had no trouble with any of this people ataacking me I started with a bow and shutting of arrows from killing a whole bunch of enemies after that I sneaked around everywhere one hitting everything with a superior hunting bow till I found a dwarven bow then to a ebony and I'm still playing after that. Sneak, and archery are potentially the only two skills you need for the whole game if you know how to use them.
If you're serious about Archery, I respectfully suggest you go get a Forsworn Bow as soon as possible. Not as much of a Disk 1 Nuke as Bound Bow Which you need an Altmer to cast at level 1 but it will get you through most of the game with Smithy.
Also, their armor is improvable with Leather, which you can get from hunting. No mining, take the Hadvar Door for access to his uncle's forge, and you can grab a stack of steel from him.
Then, head out to Lost valley Redoubt for your bow, and armor, pick up as many hides on the way as you can. If you improve all the foresworn armor in the game, you can get your smithy up to a respectable near 50 depending on racial bonuses before you ever have to pick up a pickaxe. You should always be on the lookout for better arrows whenever possible, as the damage difference between iron and Daedric arrows is significantly larger than between any other iron and Daedric weapon.
